Pumpkin-Muffin

Ingredients

1.5 scoops MuscleXP 100% Whey Isolate – Double Rich Chocolate
1 Tsp vanilla extract
¼ Tsp baking soda
¼ Tsp baking powder
1 Tsp stevia
2 Tsp pumpkin pie spice
2 Tsp cinnamon
1 Tbsp chia seeds
¾ Cup oat flour
½ Cup walnut pieces
2 Tbsp natural peanut butter
½ Cup of unsweetened apple sauce
¾ Cup non-fat Greek yogurt
½ Cup egg whites
2 Cups canned pumpkin

Preparation

  1. Combine ingredients.
  2. Mix well.
  3. Pour batter into sprayed muffin tin.
  4. Top each muffin with additional walnut pieced and coconut flakes.
  5. Bake at 350 degrees for 25-30 minutes.
